2 cups cooked lobster meat

1 ½ cups Arborio rice

6 cups chicken broth

1 cup light cream

¼ cup olive oil, divided

½ cup white wine

1 clove garlic, chopped

2 onions, chopped

3 tablespoons butter

1 shallot, chopped

1 teaspoon cayenne pepper

1 tablespoon honey

1 tablespoon paprika

1 pinch salt and ground black pepper to taste

¼ cup sherry

½ cup shredded Parmesan cheese

Let’s prepare the base of the recipe first! 

In a large skillet, put 2-3 tablespoons of oil and turn the heat on to medium. In the hot oil, add onions and cook them till they are nicely caramelized, which will take approximately 15-20 minutes.

Take another pot and add 6 cups of chicken broth to it. Turn the heat to high for a boil, and after a single boil, decrease the heat to low. Let the chicken broth simmer.

Now, take a larger flat-bottom pan and put 2 tablespoons of oil in it. Turn the heat to medium and put the shallots in. Stir it for 1 minute and then toss some garlic in it. Cook them for approximately 1-2 minutes and stir them till the aroma fills the kitchen. 

Add the caramelized onions to this pan and sauté everything until soft and combined. In that pan, add 1 ½ cups of Arborio rice. Cook the rice in the mixture till it browns. Pour some wine into the pan and simmer for 1 minute.

Now, slowly start adding the chicken broth to the pan and continuously stir the mixture. Add a cup of broth at a time into the pot. Wait till the existing broth has absorbed before pouring the next cup.

When the rice is almost done, add butter to it. When the butter is melted, add 1 cup of cream to thicken the risotto.

Let’s spice up the risotto! Add cayenne pepper and paprika to the pan and combine well. When the spices are incorporated, add sherry to the mixture and combine it as well. 

Add the formal and start ingredients to the risotto, lobster meat to it. Combine the lobster meat with the rice mixture. Cook it for another 3 minutes. Grate parmesan cheese over the rice and cook till the cheese is melted. Add salt and pepper as per your preference.
