All the ingredients needed to make Kadgeree are listed below

  • 2 cups uncooked basmati rice
  • 4 ounces smoked haddock
  • 4 green onions
  • 2 eggs
  • 1 bay leaf
  • ¼ cup frozen green peas
  • 1 tablespoon butter
  • 1 cup milk
  • 1 teaspoon curry powder
  • ½ cup low-fat plain yogurt
  • Salt and pepper to taste

Let’s make the rice first. Take a pot, put the rice in it as per the servings, and add water. When cooked, drain the water and set them aside.

Now prepare some eggs. In a saucepan with boiling water, put some eggs. Immediately remove from heat and let them sit in that water for 10-15 minutes. After that, remove the eggs and let them cool down before peeling and chopping them into 4 pieces.

Take a skillet and put the haddock in it along with the bay leaf. Add milk into the skillet till the fish is fully immersed. Let it simmer over medium flame till the fish begins to flake. Take the fish out of the skillet and flake it with the help of a fork.

Empty the skillet and melt a spoonful of butter in it. Bring the heat to medium and put diced onions in it, followed by peas. Put 1 teaspoon of curry powder and mix everything well for 2-5 minutes. 

After the onions look cooked, add the rice, fish, and eggs back into the skillet. Season the dish with salt and pepper as per your liking, and gently toss everything together. Cook it for another 1-2 minutes. 

Serve this piping hot with yogurt on the side, and enjoy.
