  • 1-3/4 lb. of fully ripe apricots
  • 5-1/2 cups sugar

  • 1 box Sure-Jell fruit pectin

Sanitize the container (in which you wish to store the jam) in boiling water along with its lids. 

Take 3-4 lb of ripe apricots to clean, chop, and pit in a large bowl. Now blend the apricots in a blender with their skin on until a smooth mixture is formed. You can completely skip the blending step if you like apricot jam with chunks. 

Now add 1-2 tablespoons of lemon juice to the fruit. In a saucepan, mix water and Pectin. Boil this mixture on a high flame, while stirring it continuously. After approx. 60 seconds, gradually add the fruit into the mixture and stir it for 3 more minutes before switching off the flame.

Immediately transfer the hot jam into the container around 1/2 to the top, and clean the edges to prevent any contamination. Put the lids on and put the container aside at room temperature for at least 24 hours. 

Now you have the option to either refrigerate the jam for up to 3 weeks or freeze it for up to 1 year.
