  • 16 ounces of all-purpose flour
  • 3 tablespoons melted unsalted butter
  • Lemon zest of 1 lemon 
  • 3 ounces of granulated sugar
  • 2 teaspoons baking powder
  •  8 ounces of buttermilk
  • 1 packet of yeast 
  • 3 tablespoons softened unsalted butter, 
  • 1/4 cup white sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon kosher salt

For the Glaze

  • 2 teaspoons ground cinnamon
  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup confectioners’ sugar

Let’s prepare the oven first by preheating it to 200 degrees C. Take a baking tray and grease it with some butter brush, and oil.

Prepare the dough by adding granulated sugar, 1/2 teaspoon of salt, and 3 ounces of soft butter into the bowl of the stand mixer and mixing this on low speed first. When combined, turn the speed up to make it fluffy. Now, add 1 whole egg and some lemon zest, and again mix everything together. 

After this step, add 16 ounces of all-purpose flour and one package of yeast to the mixture along with 8 ounces of buttermilk with 1 tablespoon of salt, and combine everything together with the paddle attachment. When a soft but non-sticky dough is prepared, stop the mixer and put the dough in a deep, large bowl. Put it aside to rest until it doubles in size. 

When doubled in size, push the air out of the dough and lay the dough flat on an oiled counter. Roll the dough out and sprinkle the mixture of 1/2 a cup of white sugar, one and a half tablespoons of cinnamon powder, and a quarter cup of brown sugar. Make sure to spread the mixture well. Roll the dough into a log and cut off the small roll pieces from it. 

Place them in a greased baking tray and make sure they are placed at a distance from each other. Keep them aside to proof more, and when doubled in size, brush some butter on them to prepare them for baking. Put them in the oven to bake till the top is brown. 

Simultaneously, prepare the glaze by adding sugar, cream cheese, and 4 ounces of butter in a mixing bowl and combining them. Adjust the consistency of the glaze by adding milk to it. 

Take out the buns from the oven, and when they are still hot, cover each roll with a generous amount of glaze.
