Here is the list of ingredients that you need to make these Gordon Ramsay-style Coconut Pancakes at home 

  • 100g plain flour
  • 100g unsweetened desiccated coconut
  • 250ml coconut milk
  • 1 egg, beaten
  • 1 1/2 tsp baking powder
  • 1 tbsp runny honey
  • 150g caster sugar
  • 1 ripe mango
  • Oil, for frying
  • Juice of 4 limes
  • lime zest of 1 lime

Initiate this recipe by preparing the pancake batter first. Take 100 g of unsweetened desiccated coconut and blend it in a blender till nicely chopped. Now take 100 g of plain flour, 1 and 1/2 tablespoons of baking powder, and blended coconut in a bowl and mix them. In this mixture, add an egg and mix it well. Now, gradually add coconut milk and honey to the mixture to make it into a smooth batter. Set the final mixture aside to rest for nearly 15 minutes.

On the other hand, prepare lime syrup by pouring 150 ml of water, the zest of 1 lime, and the lime juice into a pan. Simmer the mixture till the sugar is completely dissolved and the mixture is converted into a syrup. Adjust the taste of the syrup as per your liking and set it aside to cool down. 

Take a heavy-bottomed pan, heat up some butter or oil, and pour the pancake batter in it. Cook them on both sides until golden.

Now, start assembling the warm pancakes with the mango slices on the side and a drizzle of lime syrup on top.
